Chef Jamie Celaya’s journey is one of resilience, passion, and reinvention. At 30, amidst Chicago’s economic struggles in the early 2000s, he left behind the familiar to pursue his dream at Le Cordon Bleu, inspired by childhood memories of lively kitchens. That leap launched him into Chicago’s culinary scene, where he mastered gourmet pub fare and discovered his talent for leadership.


Restless for growth, Jamie joined the prestigious NoMI Restaurant at the Park Hyatt Chicago, which opened doors to which paved the way for a successful 14-year career with Hyatt Hotels. From the U.S. to Asia, each role refined his craft, but it was Vietnam that captured his heart. Its vibrant culture and flavors became his muse, inspiring a deep desire to build a lasting legacy.


After years of honing his skills at 5-star resorts and learning invaluable business insights from mentors, Jamie realized his ultimate dream: OKRA FoodBar. More than a restaurant, it’s a celebration of his journey and a love letter to global flavors and community.


Today, as Co-Founder and Executive Chef, Jamie pours his heart into every dish, each one a tribute to his journey and the people who’ve inspired it. The love and support from the Thao Dien community have been nothing short of extraordinary, culminating in the unforgettable honor of a 2023 Michelin Guide mention. For Jamie, this recognition is more than an accolade—it’s a deeply moving validation of the vision he’s dedicated himself to and a reflection of the connections he’s built through food.
